A slightly older sparkling wine with distinct tertiary and oxidative notes, likely due to its rapid development in the bottle due to its small size. Besides tertiary notes of oxidation, yeast, and nuts, it also boasts a rich sweet, stewed yellow fruit. Delicious with strong cheeses, such as gorgonzola.

Appearance
A clear, lemon-gold colored wine with pale intensity and petillance
Nose
The nose is clean, however oxidated, but not faulty, pronounced and fully developed with characteristics of sweet stewed fruit and yeast and clear tertiary developing. We smell sweet stewed fruit, bread yeast, raisins and clear oxidized notes.
Palate
A dry wine with high acidity, medium alcohol, medium body and a creamy mousse. Flavor intensity is medium+ with characteristics of sweet ripened fruit, tertiary aromas honey and oxidated tones. We taste yeast dough, tutti frutti, dates, sherry-nutty tones, and honey.
Quality Assessment
The wine is clearly at/even past its prime, with distinct oxidative notes. This is likely due to its rapid development in half a bottle. But the wine still holds up! Besides tertiary notes, it also has plenty of fruit.
Delicious with gorgonzola!
